Taste Just Like Chicken!

I've often heard that opossum "tastes just like chicken!"

Although I have never actually heard it from someone who has actually ate possum.

I had just finished my evening chores the other day when I was on my way back to the house. I was walking between the shop and the house towards the back door, my normal route, when I thought I saw a cat drinking out of a pan I have under a leaky faucet. I have the pan there specifically for the benefit of the cats and egg layers (chickens) to have fresh water when ever their little hearts desire so seeing something drinking from it was not out of the ordinary. But the WHAT that was drinking out of it caused me to take a double take and blink my eyes a couple of times to make sure I wasn't seeing things.

Holy cannoli! A POSSUM!! In the middle of the afternoon, well, late afternoon, around 5'ish. THAT was unusual. Aren't possum nocturnal??

Never wanting to miss a photo op, I rush into the house to get my camera before it scurried away. When I got back out to the shop, it was behind some lawn chairs. I couldn't get a very good picture of him/her, so I cautiously began to move the chairs away, all the while envisioning some horrific scene playing out that would be re-enacted on some tv show like "When Wild Animals Attack Stupid People Trying to Get Photos of Them!"

Good thing I had boots on and not flip-flops,
He could have bitten my big toe off (at least that's what went through my mind!)




For some reason this possum was pretty docile. Maybe it was sick and rabid! That was a scary thought that also went through my mind! And I know what you are thinking... anyone with half a mind would not be messing around trying to get a picture of an opossum. Go ahead and say it! Thank heavens my mother doesn't know I do such stupid things.

Enjoy these photos that were shot on Friday during my morning walk with my neighbor. This sunflower field is between our houses. I really enjoy being able to see them every day.

Recipe: Chocolate Peanut Butter Sandwich!!

Disclaimer: Although Wal-mart brand ingredients are used in this gourmet recipe, the Country Chicken Girl does not promote these products. Please don't shoot me because I used Wal-mart brand peanut butter and bread. Sometimes this poor ole' little Country Chicken Girl gets to feelin' a little cheap in the pocketbook and buys the cheap-o stuff at the grocery store.


Okay, with that being said...

I have another confession to make...

I'm a closet frosting eater! I can eat frosting out of the can by the spoonful. I have been known to eat frosting on club crackers when there is nothing sweet to eat in the house. My mother once found two or three cans of empty frosting under my bed when I was young and still living at home. She was not amused!



Okay, now that the air is clear...


Please allow me to introduce my new BFF (best friend forever)!!

The Chocolate Peanut butter Frosting Sandwich!


Taa-Dah!






Take two pieces of bread. Any ole' bread will do.
Chocolate and Peanut butter can enhance the flavor of even the cheapest of breads!
I happened to have this kind on hand.




Spread one piece of bread generously with Chocolate Frosting.
This is what I had on hand, but you can use your favorite brand.





Spread the other piece of bread with peanut butter, not too much, you don't want to over power the frosting. As you make more of these, you will find the perfect amount of chocolate and peanut butter to accommodate your taste buds. Some people like more of a chocolate taste, like me and some like the peanut butter to shine through.




Make sure to take your time with the frosting and peanut butter, presentation is everything.





Last, put the two pieces of bread together,
chocolate against the peanut butter,
close your eyes and take a bite.
Oh my... oh my, my, my!!!

In this post I would like to introduce you to Dee and Gary Scott of Lusk, WY. Dee and Gary own and operate Dee's Pantry and Gary's Garden.




As they say on their website "we strive to bring back memories of things your grandmother or mother made in days gone by and tingle your taste buds!" Dee must be a canning guru! You should see all the things that she has for sale. We're talking salsa (lots of different varieties), jams, jelly, fruit butters, chutneys, relishes, pickles, sweet pickled beets and pickled carrots, snappy dilly beans and dilled green tomatoes are just a few. Dee uses only the freshest fruits and home grown vegetables in her recipes. Her products are also free from preservatives and chemicals. Dee also makes everything one batch at a time, just like our grandmothers and mothers did.


So while Dee is busy canning in the kitchen, hubby Gary is busy tending to the garden. Gary grows the majority of the produce used in their canned goods. Their vegetables are grown without insecticides or chemicals. Their vegetable selection is fantastic. Last week I bought the last Rocky Ford cantaloupe they had (it was delicious!) and some rhubarb (which I cut and froze to use later). They also had sweet corn, green beans, bell peppers, beets, cucumbers, zucchini, rhubarb and more!

(My mom use to grow what seemed like acres of green beans each summer and can quarts upon quarts of them. I can remember snapping piles of beans that were as big as mountains and went clear to the ceiling of the kitchen. Funny though, I don't really remember how they tasted! Surely I wasn't a picky eater and never ate them, especially after all the hard work that she and my grandma put into them!)

Since they travel all the way from Lusk to come to the Farmers' Market in Scottsbluff, they sometimes arrive a little late. So if you show up right at 7am they might not be there yet so cut them a little slack. Their product is worth the wait.

Things That Make Me Happy...

Just in case you need a smile or two today, here are a few of my photos that put a smile on my face every time I look at them.
